Crusted Beef Sausages & Cauliflower Steaks

A delicious yellow pepper pesto adds sauce to delicious spiced sausages and zesty cauliflower steaks.

Ingredients:

 

Sausages

 

375 g

Eskort Beef Sausages

10 ml (2 t)

cumin seeds

5 ml (1 t)

smoked paprika

5 ml (1 t)

cardamom

5 ml (1 t)

coriander seeds

5 ml (1 t)

coarse salt

5 ml (1 t)

black pepper

5 ml (1 t)

garlic powder

1

lemon, zest

 

olive oil for cooking

Cauliflower Steaks

 

2 heads

cauliflower

45 ml (3 T)

olive oil

45 ml (3 T)

butter

1

lime, zest and juice

 

salt and pepper to taste

Yellow Pepper Pesto

 

1

yellow pepper, charred

125 ml (½ C)

leeks, cooked

5 ml (1 t)

salt

30 ml (2 T)

avo oil

5 ml (1 t)

yellow curry paste

1

lemon, zest and juice

Method:

Sausages

  • Remove sausage meat from their casings and mould around skewers.

  • Place all spices in a pestle and mortar and grind.

  • Cover the sausage skewers in spice mix and place on a greased baking tray.

  • Bake in the oven for 10 minutes at 200°C or fry until cooked.

Cauliflower Steaks

  • Slice each head of cauliflower through the core into 4 thick slices. Place on a lined baking tray.

  • In a small mixing bowl, combine the rest of the cauliflower steaks ingredients. Drizzle over the cauliflower and bake for 10 - 15 minutes.

Yellow Pepper Pesto

  • Place all ingredients in a food processor and blend until smooth.

Serve

  • Remove sausages from skewers and serve on cauliflower steaks with pesto on the side.
