Sausage & Beans on Toast with pickled onion

Pickled red onion and a butter bean hummus with a whiff of garlic will make this simple breakfast a flavour-packed delicious start to your day.

375 g

Eskort Breakfast Sausages

4 slices

toasted rye bread


poached eggs

250 ml (1 C)

fresh edamame beans


salt & pepper to taste

Pickled Red Onions



red onion, thinly sliced

60 ml (½ C)

spirit vinegar

15 ml (1 T)


Butter Bean Hummus


410 g (1 can)

butter beans, drained

1 clove

garlic, roasted

60 ml (½ C)

avo oil


lemon, juice


salt and pepper to taste


  • Preheat oven to 180°C.

  • Place sausage on a greased baking tray and bake for 15 minutes.

Pickled Red Onion

  • Heat vinegar and add sugar.

  • Pour over sliced red onion and set aside

Butter Bean Hummus

  • Place all ingredients in a food processor and blend until smooth.


  • Spread hummus on toast then place sausages and edamame beans on top.

  • Finish off with poached eggs and pickled red onions.
