These yummy bacon muffins can be enjoyed fresh out of the oven with butter and pesto or as a #JustDelicious hot breakfast-on-the-go!

Ingredients:

 

Muffins

 

200 g

Eskort Diced Bacon

500 ml (2 C)

cauliflower, roughly chopped

60 ml (¼ C)

chives, chopped

250 ml (1 C)

Grana Padano cheese

750 ml (3 C)

cake flour

10 ml (2 t)

baking powder

5 ml (1 t)

salt

125 ml (½ C)

butter

3

eggs

500 ml (2 C)

milk

To Serve

 

45 ml (3 T)

basil pesto

45 ml (3 T)

butter

Method:

  • Heat the oven to 180°C.

  • Fry the bacon in a pan over a high heat until it crispy.

  • Add the rest of the ingredients in a large mixing bowl and mix until well combined.

  • Grease an 8 pan muffin tray with non-stick cooking spray and evenly distribute the batter.

  • Bake for 20 minutes or until cooked and golden.

Serving

  • Slice the muffins in half and top with butter and basil pesto.
