Ingredients:

 

Chops & Vegetables

Eskort Kassler Chops

large aubergines, quartered

500 g

baby beetroots, halved

500 g

carrots

1

large red pepper, fresh

 

salt and pepper, to taste

65 ml (¼ C)

olive oil

Tzatziki

 

1

large red pepper, roasted

375 ml (1½ C)

Greek yogurt

65 ml (¼ C)

feta cheese

10 g

fresh coriander, chopped

 

salt and pepper, to taste

Method:

Black Pepper Kassler Chops with Roasted Vegetables

  • Preheat the oven to 190°C.

  • Place the kassler chops and vegetables on a baking tray, and drizzle with olive oil.

  • Season with salt and pepper, adding extra pepper to the chops. Bake for 15 minutes.

Red Pepper Tzatziki

  • Remove the red pepper from the baking tray, cut it in half, then deseed and slice into thin strips.

  • Add the red pepper, yoghurt, feta and coriander to a small bowl and mix well to combine.

  • Season with salt and pepper to taste.

Serving:

  • Plate the black pepper kassler chops with a side of roast vegetables. Spoon the red pepper tzatziki over the vegetables and serve.
