Sage Pork Chops with Chargrilled Four-Cheese Pitas

Here’s some sage advice! Pop these #JustDelicious chops and cheesy pitas on the coals for a family braai day worth remembering!

Ingredients:

bay leaves

30 ml (2 T)

fresh sage, chopped

30 ml (2 T)

olive oil

1

lemon, juice

 

salt and pepper to taste

pita breads

65 ml (¼ C)

mozzarella cheese, grated

65 ml (¼ C)

white cheddar cheese, grated

65 ml (¼ C)

cream cheese

65 ml (¼ C)

feta cheese

60 g

leeks, chopped

65 ml (¼ C)

butter, melted

Method:

Bay Leaf and Sage Pork Chops

  • In a pestle and mortar (or food processor), grind the bay leaves, sage and olive oil together until a smooth paste forms.

  • Add the lemon juice and combine to create a marinade.

  • Rub the pork chops with marinade and refrigerate until needed.

  • Remove just before braaing and season with salt and pepper to taste.

Chargrilled Four-Cheese Pitas

  • In a mixing bowl, combine the mozzarella, white cheddar, cream cheese, feta and leeks.

  • Slice the pitas open on one side and spread the cheese mixture generously on the inside and brush the outside with butter, then refrigerate.

On the Braai:

  • When the coals are ready and the braai grid is hot, lay the chops on the grid above the coals for 8 minutes on each side.

  • Once cooked, move them to the side of the grid, off direct heat, for two minutes.

  • Place the pitas on the grid above the coals and braai until golden and crispy on both sides.

Serving:

  • Serve each braaied pork chop with a chargrilled pita and a side of fresh salad. Cut lemons in half and squeeze over the meal for extra zestiness.
