Stuffed French Toast Waffles

Stuffed with melted cheese, chives and smoked pulled pork, this french toast waffle is the lunch box filler of your #JustDelicious dreams!

Ingredients:

 

French Toast Waffles

 

500 ml (2 C)

Eskort Smoked Pulled Pork

8 slices

your favourite bread

3

eggs

45 ml (3 T)

milk;

5 ml (1 t)

hot English mustard

250 ml (1 C)

mature white cheese

30 ml (2 T)

chives, finely chopped

45 ml (3 T)

olive oil for frying

 

salt and pepper for seasoning

125 ml (½ C);

mixed leaf microgreens, for garnishing

Dip

 

65 ml (¼ C)

creamy mayonnaise

30 ml (2 T)

sweet chilli sauce

65 ml (¼ C)

feta, crumbled

1

fresh green chilli, finely chopped

Method:

Stuffed French Toast Waffles

  • Preheat the waffle iron (or a normal frying pan, if you don’t have a waffle iron).

  • Add the eggs, milk, mustard, salt and pepper to a mixing bowl and whisk together.

  • Place four slices of bread next to each other and spread 125ml (½ cup) pulled pork on each slice.

  • Top each slice with 60ml (¼ cup) cheese and sprinkle with some chives.

  • Close with the second slice and dip each sandwich in the egg mixture.

  • Lightly brush your waffle iron or frying pan with oil and add the sandwiches.

  • Cook until the sandwich is crispy and golden and the cheese has melted.

Sauce

  • In a small mixing bowl, add all the dip ingredients and mix well to combine.

Serving

Place each waffle in a lunch box, add a dollop of spicy sweet chilli mayo alongside it and garnish with microgreens.
