Deconstructed Welsh Rarebit

Slices of sourdough bread layered with a savoury cheddar mixture and our #JustDelicious Mini Picnic Ham, oven-baked until golden brown and then topped with a creamy beer and spring onion sauce.

500 g

Eskort Mini Picnic Ham, sliced

8 slices

sourdough bread

Cheese Topping


20 ml

Dijon mustard

15 ml

Worcestershire sauce

45 ml


60 ml


250 ml

white cheddar, grated




onion, thinly sliced

60 ml


2 handfuls

spring onions

125 ml

Weis beer


salt & pepper for seasoning

60 ml

  • Preheat oven to 180ºC.

  • Slice the bread into four slices and place onto a baking tray lined with parchment paper.

  • In a mixing bowl combine the Dijon mustard, Worcestershire sauce, flour, butter and grated cheddar and mix.

  • Slice the ham and layer with scoops of the cheese mixture on the sourdough bread.

  • Bake in the oven for 10 minutes until the cheese has melted and turned golden brown.


  • In a small saucepan, fry the sliced onion in butter until soft and golden, add the spring onion, beer, salt and pepper to taste and simmer on medium heat until the sauce has thickened.

  • Finish by adding the cream, milk and flour. Mix till thickened.


  • Top the welsh rarebit with the beer and onion sauce and enjoy.
