Pork Neck Mango Curry

This super-tasty and #JustDelicious combination of pork and mango hits the (warm) spot every single time!

Serves: 4

Ingredients:

 

1.5 kg

Eskort Fresh Pork Neck, cut into bite size pieces

30 ml

olive oil

1

onion, finely diced

2 cloves

garlic, finely chopped

5 ml

gingelpowder

15 ml

curry powder

2.5 ml

tumeric

5 ml

cumin

5 ml

coriander powder

 

salt

 

ground black pepper

1 can

chopped tomatoes

250 ml

chicken stock

2

mangoes, peeled and cut into cubes

250 ml

double thick yoghurt, to serve

 

fresh coriander, to garnish

 

Basmati rice, cooked according to package instructions

Method:

  • Heat the oil in a pot and add onions and garlic, fry until softened.

  • Add the pork neck pieces, ginger, curry, turmeric, cumin and coriander and season with salt and pepper.

  • Fry for a few minutes, stirring spices through pork until pork has browned.

  • Add chopped tomatoes and chicken stock and bring to a boil.

  • Turn down the heat and simmer for 45 minutes to 1 hour until pork is tender.

  • Just before serving, add the mango and stir through to combine with the curry.

  • Serve warm, with rice (or starch of your choice), garnished with coriander.
