Ham, Leek & Potato Pies

These #JustDelicious pies are the perfect way of convincing everyone to stay in and keep warm, they’re also great as a grab-n’-go snack or take-along treat when travelling!

250 g

Eskort Mini Picnic Ham, finely sliced into strips

30 g



large onion, finely chopped


leeks, finely sliced


large potatoes, cut into small cubes

5 ml

mixed herbs

30 g

plain flour

200 ml

chicken stock

100 ml

double cream

10 ml

wholegrain mustard




ground black pepper

1 roll

puff pastry, thawed


flour for dusting


egg, beaten, for egg wash


Spray n Cook


  • Preheat oven to 200°C and prepare a baking tray with spray and cook.

  • Melt butter in a large frying pan, add the onion, leeks and potatoes and cook until soft. A

  • dd the mixed herbs, flour and then the stock and stir well.

  • Turn down the heat and add the cream, mustard and ham and season to taste.

  • Cook until thickened, remove from heat and set aside to cool.

  • Dust a little flour on a smooth surface and lightly roll out the puff pastry.

  • Cut pastry into 4 squares.

  • Onto one half of each square add a generous dollop of the ham, leek and potato filling (leaving a small edge to seal pies).

  • Fold over the other half of the pastry square to cover and using a fork, press edges to seal them well.

  • Make a couple of small slits on the top of each pie and brush with the egg wash.

  • Place pies on the baking tray and bake for 25 - 30 minutes until golden brown.

  • Serve pies warm with a side dish of your choice.
