Quinoa, Bacon & Herb Salad

You can have your healthy and your bacon all in one #JustDelicious quick and easy to prepare dish!

375 g

Eskort Diced Bacon

80 g

slivered almonds

15 ml

olive oil


onion, finely chopped

250 g

quinoa, rinsed

500 ml

chicken stock

1 sprig


15 g

chives, finely chopped

15 g

parsley, finely chopped




ground black pepper


  • Heat a large frying pan, add slivered almonds and toast until golden brown, tossing occasionally to brown both sides. Remove from pan and set aside to cool.

  • Heat oil in the same pan and cook bacon until almost crispy, remove bacon from pan and set aside, reserving bacon oil.

  • Add onion and cook until onion has softened.

  • Add the quinoa, stock and thyme to the pan and bring to a boil.

  • Cover and cook over low heat until the stock has been absorbed, about 17 minutes.

  • Remove the quinoa from the heat and let it stand, covered, for 5 minutes.

  • Discard the sprig of thyme and fluff the quinoa with a fork.

  • Stir in the bacon, chives, parsley and toasted almonds.

  • Season the quinoa with salt and pepper and serve.
