Spicy Meatball Lettuce Cups

These irresistible and #JustDelicious lettuce cups are packed with flavour and spice and all things nice!

Serves: 4



500 g

Eskort Pork Mince


cucumber, diced

15 ml

rice wine vinegar


red chilli, de-seeded and finely sliced

15 g

fresh ginger, grated

small bunch

fresh coriander, chopped




ground black pepper

10 ml

sesame oil


carrots, shaved


gem lettuce leaves, separated


chilli sauce


brown rice


  • Cook brown rice according to package instruction, set aside.

  • Toss the cucumber with the vinegar and half the chilli and set aside.

  • Put the remaining chilli, ginger and half the coriander in a small blender, blend until smooth.

  • Add pork mince to a mixing bowl and add blended mixture, season with salt and pepper and mix to combine.

  • Take a heaped tablespoon of the pork mince and form into small meatballs.

  • Heat sesame oil in a frying pan and fry meatballs until cooked through and golden brown ± 8 - 10 minutes.

  • Place lettuce leaves on a plate, add some brown rice, shaved carrot and top with 2 meatballs.

  • Top with the cucumber pickle and some fresh chopped coriander.

  • Serve with a chilli sauce or sauce of your choice.
