200 g | Eskort Rindless Back Bacon |
60 ml | butter |
4 | large eggs |
2 | ripe avocados |
½ | small red chilli, finely chopped |
15 ml | lemon juice |
| salt |
| ground black pepper |
| fresh rocket |
4 slices | sourdough bread |
Method:
Place avocado in a bowl, add lemon juice and chilli and season with salt and pepper.
Using a fork, mash the avocado until mixed well and no lumps remain, set aside.
Heat a little butter in a large frying pan and working in batches, place slices of sourdough bread in pan and toast until browned, turn and toast the other side, remove and set aside and repeat with remaining slices.
In the same pan, add a little more butter and fry the bacon, remove and set aside.
In a clean pan, heat a little more butter and fry eggs to your liking (you could also scramble them if you so wish).
Assemble sandwiches with a layer of rocket, a generous dollop of the avocado and top with bacon and a fried egg.
Season with salt and pepper and serve!
