Saucy Sausage Enchiladas

Call the fire department ‘cause these easy cheesy enchiladas are on fire - ‘cause they’re so darn #JustDelicious.

Serves: 4-6



500 g

Eskort Cheese Grillers

1 packet

brown wheat tortillas


onion, chopped

15 ml

olive oil

2 cans

chopped tomatoes

2 cloves

garlic, crushed

5 ml

chilli flakes

5 ml


200 ml

chicken stock

125 ml





ground black pepper

100 g

white cheddar cheese

100 g

cheddar cheese


fresh coriander, chopped, for garnishing


  • Preheat oven to 200°C.

  • Grate both cheeses and mix together in a bowl.

  • Heat oil in a pot and fry onion until softened, add garlic and fry for another minute, then add chopped tomatoes, chilli flakes and origanum.

  • Add chicken stock and cream and simmer for 10 - 15 minutes until sauce has thickened.

  • Season to taste, stir through and set aside.

  • Spoon a tablespoon or two of the sauce onto a tortilla, spreading evenly then sprinkle some of the mixed cheese on top, place 2 cheese grillers on the bottom edge and roll up the tortilla.

  • Spoon a little of the sauce into the bottom of a shallow baking dish, then place on top.

  • Repeat the process until baking dish is packed snugly with rolled and filled tortillas.

  • Pour over the remaining tomato sauce, sprinkle the remaining cheese over and place in oven.

  • Bake for 15 - 20 minutes or until cheese has melted and is browning.

  • Serve hot with a sprinkling of fresh chopped coriander.
