Ingredients:

Eskort Gold Medal Pork Sausages

large red red pepper, sliced

2 cloves

garlic

mushrooms, halved

15 ml

olive oil

a few sprigs

fresh thyme

30 ml

honey

potatoes, peeled

125 ml

milk

15 ml

butter

125 ml

cheddar cheese, grated

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Method:

Preheat oven to 180C.

Combine sausages, red pepper slices, garlic, thyme, oil, honey, salt and pepper and roast in roasting pan for 10 minutes.

Add mushrooms and roast for a further 10 minutes until the sausages are cooked.

Cook the peeled potatoes in boiling salted water until soft, drain and mash.

Add the milk, butter, cheese and season to taste.

Serve the mash with the sausage, sticky red pepper and mushrooms.
