Most sweet cocktails (like the Strawberry Daiquiri and Cosmopolitan) work well with a sugared-rim glass. To do this, mix a few drops of Lime Cordial with white sugar on a side plate or saucer. Dip the first three millimeters of the top of the glass into cold water and immediately press it into the lime-sugar mix. Allow it to stand for a few seconds, then lift and gently brush any extra sugar off. |

If you are making for more than one person, dont double the quantities. Add 25% more of each ingredient per extra person. Play around with strength and taste - dont be afraid to try new things till you have got it the way you want it. |

When making Caipirinha or Mohjito, wash the limes and then roll them to soften and release the juices inside before slicing the limes. Avoid crushing the skins. |

Cosmopolitans are really diverse. Try the same recipe as above but substitute Pineapple juice instead of the Cranberry. Garnish with a wedge of pineapple and a tropical umbrella. |
